Gulabjamun Cake (without whipped cream & food color) Step by step


These days, I try to make everything baby friendly. As parents we love to offer Roop (my 1.5 yrs old handsome boy😍😝) almost everything since he started to have solid foods. 

This Gulabjamun CakeπŸŽ‚ is also of no exceptions. I made this cake on my husband's birthday. It is stuffed and topped with soft Homemade Gulabjamuns. I have not used any whipped or heavy cream for frosting. No artificial food colour has been added also. Let's have a step by step look at the recipe.

Preparation time: 60 minutes 
Baking time: 25 minutes
Total: 1 hour 25 minutes

Ingredients : (For the cake)
πŸ”Έ️1/2 cup powered sugar 
πŸ”Έ️1/2 cup unsalted butter (melted)
πŸ”Έ️1/2 cup + 1 tablespoon maida (all purpose flour)
πŸ”Έ️3 eggs
πŸ”Έ️1.5 tsp baking powder 
πŸ”Έ️1.5 tsp vanilla essence

Baking the cake:
▪️Take sugar and butter in a mixing bowl and beat with a blender till it gets creamy. For me it took around 5 minutes or so.
▪️Add eggs one by one (not all together) and blend till the batter becomes creamy and fluffy and forms soft peak.
▪️Add seived maida, vanilla essence, baking powder and mix it in cut and fold method. Finally blend all together for a minute or so.
▪️Preheat microwave oven in 180 degree in convection mode.

▪️While preheating oil brush the cake tin and sprinkle some maida so that the baked cake easily comes out of the tin.

▪️Pour one layer of the batter in cake tin then place 5 to 6 mashed Gulabjamuns and pour the rest of the batter.
▪️Finally bake it for around 20-25 minutes in 180 degree.
As I already said that I thought of making a baby friendly cake. So for frosting I used,

Ingredients : (For the frosting)
πŸ”Έ️2 tbsp unsalted butter, 
πŸ”Έ️2 tbsp low fat fresh cream (can be homemade also)
πŸ”Έ️Some digestive biscuits (go as per your choice)
πŸ”Έ️2 to 3 tbsp powdered muesli
πŸ”Έ️1 tbsp powdered dry fruits
πŸ”Έ️ 1/2 cup milk

Frosting the cake:
▪️Mix and blend all the ingredients well. If it's too thick you can add more milk. The consistency will be on the thicker side, otherwise it will get absorbed in the cake.

▪️Spread a thin layer of the frosting over the cake and place some soft gulab jamuns and dry fruits at the top.
